Publish Prefixes lets you tame large/unweildy publish and edit menus by grouping channels by using prefixes in your channel names.
If your channel names are:
Clocks
Widgets
Tools
You can rename them to
Products: Clocks
Products: Widgets
Products: Tools
This would create a Parent menu item called Products, with Clocks, Widgets and Tools as the child items.

Simple, does what it does perfectly. Reduces the clutter for clients in the Content menu, obviously most handy on large complex sites.
